Hello Friday and hello to one of my favourite dishes ever!
I wasn't a huge Thai cuisine lover before, but thanks to my
husband I have turned into one and veggie/ tofu Pad thai
is definitely my favourite dish. Second one got to be Massaman
curry, but I still have never tried to prepare it at home, so today,
I'll share with you how I prepare my Pad thai at home.
For two-three portions you'll need:
1 pack of tofu ( with or without spices/ taste )
1 carrot ( shredded )
1-2 spring onions
1-2 cloves of garlic
1 pack of noodles ( udon/ soba / etc. )
2 eggs
1-2 handfuls of chinese cabbage
1 cup of mung bean sprouts
handful of sugar snap peas ( optional )
1tbsp of tamari soy sauce
1tbsp of fish sauce
1tbsp of rice vinegar
1/4 cup of honey ( Acacia honey works too )
3tbs of sesame oil
* to garnish : chopped coriander and crushed indian nuts, lime
Boil the noodles according to the package directions, drain and
set aside.
In a medium sauce pan, combine soy sauce, fish sauce, honey and
rice vinegar. Turn the heat to medium and bring to simmer.
Stir occasionally. Set aside.
On a medium high heat, warm up the large wok pan and add oil.
Then add spring onion and garlic. Crack the eggs and let them cook
for a few seconds. Scramble them with a wooden spoon and then add
cabbage, bean sprouts and shredded carrot.
Cook for 3 minutes and then add tofu ( cut in bite size cubes ).
Stir occasionally until everything is ready ( 4-5 minutes ).
Add cooked noodles to the wok pan and then the sauce which you've
previously made.
Stir everything, until it's nicely combined and set aside.
Serve immediately and garnish with chopped coriander, crushed
indian or peanut nuts and squeeze a little bit of lime juice over the meal.

Good Wednesday afternoon!!
How are you doing my dear readers? I hope that
this week has started well for you and that the cold and
darkness are not getting to you as much as they are to me.
I'm still in a "transition" phase in my head and body
from warm and sunny days to cold, chilly and mostly cloudy days.
I've been lacking some inspiration and adrenaline for the past week
or so, but I'm getting to the core of this and will be embracing the
fact that Winter is around the corner very gladly.
I have decided on one of the trips which I've been talking about
in my last post and I'll be going to London in the beginning of December.
I'm very excited about this trip and have already started to research
which cool places I want to visit this time, which restaurants I need to
check out and also, I'm excited to see all of those Christmas lights and
decorations of London' streets and as well, it will be a perfect trip to get
something special for myself as a Christmas present to myself :D
(and of course to my family)!
When it comes to this outfit, I'm wearing my absolute favourite bag ever
from Chanel's Dallas collection. I've got this bag back in July, in London
and ever since then I still can't believe that this beauty is mine, esp. because
it's so unique and limited availability.
Jacket is my only purchase from Alexander Wang for H&M collection.
As I've already mentioned, I didn't really like this collection. I've found
almost all of the pieces either looking very weird or were in some weird
fabric/ material which I couldn't wear on my skin even for 5 minutes.
But! This jacket... Almost as if it wasn't part of this collection, perfectly designed,
biker jacket/ coat of great quality and very warm too.
We took these photos on the way to my favourite little cafe in the city
and it's called Kuppi ja Muffini.
If you will visit Helsinki anytime soon and are having a huge sweet tooth
like myself or are after most delicious, home cooking then this place should
be your choice.
Also, have to mention that the interior of this cafe is so cozy and inviting,
you will feel like you're in a living room at home just that you'll be served
by the most kindest ladies I've ever come across in restaurant/ cafe business.

Outfit post - Father's Day

Good morning and happy Monday everybody!
How was your weekend?
I had such a lovely day yesterday. We have celebrated
Father's Day here in Finland and even though I have no
father in who's name I can celebrate I do have a little princess
and her father is an admirable man, so in his name we went for
a coffe and some nice cakes at his parents' place, then up next we
went to our local Sea Life, as we all love the under water world and
after that we had such a delicious and fun lunch at Viking themed
restaurant.
It was totally not an ordinary "lazy" Sunday and it was proof to me
that Sundays can still be a lot of fun.
Here's an outfit which I wore yesterday and I felt really great in
this combo. Also, not my usual kind of outfit, but it was perfect
for yesterday. :)
I'm planning some trips for the end of this year, but right now everything's
such a mess and I'm not sure where exactly I'll be off to, but whatever I
do choose in the end, it will be fun and work brought together - can't go wrong
with that!
Have a great start of the new week! Only couple of more weeks and Christmas
is here!! Yaaaaay! :D

Good Friday everybody!
Weekend is here and I'm excited about it as I'm going
to a concert tonight which I've been wanting to check out
for a while and also this Sunday is Father's Day celebration
in Finland and I have some nice plans for that day, so keep
an eye on my Instagram for "live" updates :)
What are your plans for this weekend?
We've been having very dark, rainy and chilly week in Helsinki
that I haven't been that much interested to spend time outside,
but I did crawled out of my bed very early yesterday morning and
went to H&M store to shop Alexander Wang's collection.
I must say that some items looked way much "weirder" than I thought
at first when checking them online.
In the end I've bought a biker jacket for this Winter which was a
perfect fit for me and my style.
Did you get anything from this collection?
Another "thing" that marked my day yesterday was Sia's new song
"Eye of the needle". Oh my, how I love her voice and weirdness...
She's definitely a breath of fresh air on the a little bit boring pop scene.

Gourmet moment: Fruit smoothie

Good Wednesday everybody!
I'm back with gourmet moment in which I'd like to
share a quick and easy recipe for one of my favourite
smoothies. I like to make fruit smoothies for breakfast
or as a nice daytime "snack".
I always try to make the healthiest version of smoothies
and load only good ingredients in them.
This fruit smoothie is very much loved in my household
and is equally kid and adult friendly. :)
I hope that you'll give it a try and if you do, let me know
how did you like it.
For this smoothie which will give you 2 portions, you'll need:
-a little bit of Almond milk,
-teaspoon of Acacia ( or any other ) honey,
-handful of organic muesli,
-1 ripe banana,
-2 smaller apples,
-2 smaller pears,
-red grapes ( quantity according to your preference )
Put everything into blender in this order- banana, grapes, apples,
pears, muesli, almond milk, honey and let it all blend well
together. Pour it in the glass cups and enjoy!

Good morning everyone!!
It's a rainy one for me, but I have some little errands to run,
so the day isn't that gloomy after all. Lately, I've been always
trying to find at least one positive thing to get me through a day.
As some of you know, I haven't been having the easiest times lately
and some of my big plans had to get postponed, so it's really easy
to fall into depressive mode and the lack of daylight, not to even mention
sun, makes it all that much harder to put a smile on day in, day out.
I come from a pretty much sunny and warm country and moving to
a completely different part of the continent did get to me after living
here for the past 7 years... November is always one of the toughest months
to survive but beautiful Christmas lights and spirit that starts with 1st
day of December def. makes it up :D
I'm already making a mind notes of things I see in the shops and online
on what to buy as a present to my loved ones.
Stores have just started to sell Christmas decorations, so I'm also looking
out for those, couple of really cute ones have caught my eye, so I might
get them in a week or two :D Crazy Christmas lady, yep!
Here's an outfit which I wore yesterday and am repeating today since
I liked it so much and I felt very comfortable in it.
The sherif brooch is my very first, "real" brooch and I'm loving it!
Blouse that I'm wearing is from COS and it's my favourite one at the moment.

November "to-do" list
Good morning ladies and good November to everybody!
How was your Halloween weekend? I hope that you've
had lots of fun, were part of some great party or just had a cozy
evening in with a good movie and a couple of treats. :)
I had lots of fun throwing a Halloween party for my daughter
and her little friends. Seeing her being so excited about getting
dressed up and having her friends being all dressed up in different
"scary" characters, melted my heart. It was the first time ever that
I have or we as a family have celebrated Halloween and I think that
we'll def. celebrate it next year too.
Since it's already 3rd day of November, I've been thinking a little bit
on what to do still before the year is over and use my day-to-day life
the best way I can.
December is all about Christmas and expecting a New Year's so that's
when I'll be def. concentrated on something completely else than "goals",
but November is perfect for this.
I've come across a really good list of 20 things which I'd like to do more
of throughout this month.
Not all of them are necessarily for me, but most of them are and here's
a list for you to check it out and see what inspires you to do better/ change
in your daily life.
Remember, it's never too late to start making changes today...
I've picked out these for myself:
-GO FOR A WALK/ BIKE RIDE
-READ A BOOK OR 10 :)
-GO TO BED EARLIER
-DON'T DWELL ON THE PAST
-ENJOY LITTLE THINGS IN LIFE
